Game Eats: Chile

Okay, so I rarely post anything that isn’t about gaming. So, for a change, I’m going to post about game snacks!

I love cooking, and lately I’m trying to expand my repertoire somewhat. This is one of my successful endeavors. I can personally guarantee no one (important) has died eating this, and several people even said that eating this was a fate marginally better than naked exposure to the cold unforgiving black void of unrelenting space. So there’s that.

3 strips Bacon
1 lbs. Ground Beef
Small bundle fresh Cilantro
3 sticks of Celery
1 Carrot
1 Onion
1/2 Green Bell Pepper
Garlic
Chile Powder
Cumin
Paprika
Sage
Chipotle Powder (optional)
3/4 cup Coffee (optional)
Turmeric
Lime Juice
Salt
Corn Meal
2 cups Beer, Scotch, or Whiskey
1 spoon full of Butter
1 spoon of Brown Sugar
1 large can Crushed Tomatoes
1 can Tomato Sauce
3 cans of Beans, mixed

Chop up and fry bacon. When it’s 1/3 done, add chopped onion and garlic. When it’s 2/3 done, add bell pepper and fry a little more.

While that’s cooking, slice up and steam the carrots for 10 minutes. When they’re done, add the celery and steam for 10 minutes more.

Add the ground beef to the bacon, brown and season together. Flavor with lime juice, chile powder, turmeric, cumin, paprika, sage, chipotle (if using), and booze.

Put beans and tomato sauces together. Add corn meal for thickness, and butter. Flavor with seasonings and a little booze. If you’re using chipotle, you can add a little coffee for flavor (not more than 3/4 cup). Bring to a simmer for 30 minutes.

Give it a try and tell me what you think. This will make a big pot of chile; add some corn bread or tortilla chips and salsa, and serve with shredded cheese on top.
